Panang is a Malay influenced type of red Thai curry. The paste has less chilli and garlic but more spices.This pack of fried onion/whole spice mix and Panang Thai curry paste is ideal for an evening meal after a busy day. Each 125 g pack of PANANG THAI CURRY PASTE contains: fried onion, cinnamon bark, star anise, kaffir lime leaves, bay leaves, green cardamom, black cardamom,dessicated coconut, garlic flakes, fennel seeds. The ingredients for the two bags of PANANG THAI CURRY PASTE: dried red chillis, , lemongrass, salt, garlic,galangal, mungbean,shrimp paste, kaffir lime peel, cumin, corriander seed, and black pepper).
For a meal for four you will need:
Tin of 400ml coconut milk. 1kg of your favourite ingredients, for example at home we often use one chicken breast per person; 1 red and 1 yellow pepper; some fine runner beans; a small tin of bamboo shoots; a tablespoon of sugar; and a tin of chopped tomatoes.
Easy 3 step recipe:
Step 1: Prepare (10 minutes) : chop your meat and vegetables into bite size pieces and fry them. (No need to fry onion as the pack contains fried onion). Remove one bag of Panang Thai Curry paste and put to one side (you will use this to adjust the strength of the curry in step 3). Empty the paste from the second packet and the rest of the curry pack into a wok or large pan with a tin of 400ml coconut milk. Add half a tin of water. Simmer gently for 5 minutes stirring occasionally.
Step 2: Add to coconut milk (5 minutes): fried ingredients and (optional) chopped tomatoes. Simmer for a further 5 minutes.
Step 3: Adjust taste (15 minutes): how mild or hot? You decide. If you want a stronger taste then add extra curry paste from the remaining bag- do this bit by bit: you can always add more but you can't take it out! Simmer for a further 15 minutes (while you relax with a drink!). Before serving remove the larger whole spices. Serve with rice (at home we use Thai Jasmine).
